Ever try your hand at having a green thumb? Try gardening this springtime! All you need is a packet of seeds, some good hearty soil, and a pot of your choice.

Here's a step-by-step guide to creating a mouth-watering lemon pie that's perfect for springtime:


 Ingredients:

1 pie crust                                                                     1/2 cup fresh lemon juice 

3/4 cup granulated sugar                                        2 tablespoons unsalted butter 

1/3 cup cornstarch                                                                                4 egg yolks 

1/4 teaspoon salt                                                             1 tablespoon lemon zest

1 cup water                                                                   Whipped cream, for serving


 Instructions: 


Preheat your oven to 375 degrees Fahrenheit. Roll out your pie crust and line a 9-inch pie dish. Trim and crimp the edges. In a saucepan, whisk together the sugar, cornstarch, and salt. Add the water and lemon juice and whisk until smooth. Cook the mixture over medium heat, whisking constantly, until it thickens and comes to a boil. Remove the mixture from the heat and add the butter, egg yolks, and lemon zest. Whisk until everything is combined. 


Pour the mixture into the prepared pie crust and smooth the top.  Bake the pie for 20-25 minutes, or until the crust is golden brown and the filling is set. Allow the pie to cool completely before serving. Top with whipped cream and additional lemon zest, if desired.
